Peach Crumble

2/3 cups flour

2/3 cups coconut sugar

1/2 cup oatmeal

1/2 cup coconut oil




Spread coconut oil on a baking dish and place in it the 3 peaches, sliced.

Mix with a fork or pastry blender: flour, coconut sugar, oatmeal, cinnamon, coconut oil, and salt.

Spread flour mixture over the peaches.

Bake at 350F for about 25 minutes or until the peaches are tender.


You can also make a blueberry cream on top by blending coconut cream and blueberries. Or use almonds or cashews, soaked overnight and blend it with the blueberries. When the crumble is done, add the blueberry cream on top!


For a healthier flour, you can use garbanzo flour. If you have a vita mix you can make your own, by blending uncooked, dry garbanzo beans. Make sure to do it in little bits at a time so as not to overstress the blender.
