I love summer ingredients and get such enjoyment out of using little bits of each ingredient I have, for different recipes.
1 bunch Kale, washed, stems removed, chopped
2 baby peppers (used 1 red and 1 yellow)
half lb. cherry tomatoes
about 5 or 6 brussel sprouts, sliced thin
himalayan salt, mustard, olive oil, garlic, 1 sprig of green onion, tumeric, paprika, chili powder
half of a small persian cucumber, sliced thin
Massage the kale and brussel sprouts with olive oil, add seasonings, green onion and garlic, keep massaging. Add the rest of the ingredients and toss. I added the walnuts last, after having heated them up on a frying pan with a little truffle oil. Then I threw the walnuts on the salad hot. It makes the salad taste better to put the walnuts in hot.
