Cauliflower Curry Rice

Making Cauliflower “rice” is simple and tasty. I added some roasted white beets on the side.

1 Cauliflower

1/4 lb spinach

a few garlic cloves

fresh ginger

flame raisins

raw organic cashews

Half an onion

fresh parsley

coconut oil

spices, celtic sea salt, curry powder, turmeric, pepper, cumin

Chop the cauliflower and put it in a food processor, and pulse until they’re in little bits. Cook the cauliflower in a pan with coconut oil, minced garlic, onions, and ginger. Add spices to taste, and cook on medium heat until soft. Add chopped cashews and raisins for a few minutes. Push the “rice” to the side and cook the spinach for a minute until it’s wilted, then mix it all together, and add some fresh chopped parsley.
