I am also so excited about cauliflower this summer! There are a few rather simple raw recipes that will add to any summer meal. My favorite this week is a delicious raw mash, that I hope will win your heart as much as it has mine, particularly if you are looking for a healthier way to appease your taste for mashed potatoes.
Raw Cauliflower “Mashed Potatoes” (Serves about 2)

1 medium head of cauliflower

1/4 cup raw pine nuts

1 Tbs. cold pressed olive oil

1 Tbs. cold filtered water

Sea salt to taste

1-2 cloves of garlic, to taste

black pepper to top
Blend all ingredients together in a blender or processor until creamy and viola! An amazing dish without even turning on your stove.
*variations – served with a side of raw or fried capers or top with smoked paprika and a dash of cayenne or blend in a bit of jalapeno for a spicy bite!
I love to serve this dish with roasted veggies and a raw salad. Try blending your favorite greens from this weeks box with my tahini vinaigrette!
